Cheesy Spinach Turkey Meatballs

Made with ground turkey, frozen spinach, two kinds of cheese, and a hint of lemon, these turkey meatballs make a delicious dinner.

Ingredients
  

  • 1 lb ground turkey
  • 1 cup thawed frozen spinach
  • 1/2 cup panko crumbs
  • 1/2 cup ricotta cheese
  • 1/2 cup shredded mozzarella cheese
  • 1 egg
  • 3/4 teaspoon lemon zest
  • 3/4 teaspoon red pepper flakes
  • 3/4 teaspoon kosher salt

Instructions
 

  • Place the spinach in 2 paper towels and squeeze out the water.
  • Line a rimmed baking sheet with foil and set it aside.
  • Preheat broiler.
  • Place all ingredients in a large mixing bowl.
  • Use your hands to mix the ingredients together.
  • Form the meat mixture into 2-inch balls using your hands or a cookie scoop.
  • Place the meatballs on the rimmed cookie sheet as you create the meatballs.
  • Broil in the oven for 8-10 minutes or until the meatballs are cooked.

Notes

You can turn the meatballs halfway through the cooking time to brown on all sides.
Watch the meatballs carefully after 5 minutes so they don't burn.
