Cheesy Spinach Turkey Meatballs

Made with ground turkey, frozen spinach, two kinds of cheese, and a hint of lemon, these turkey meatballs make a delicious dinner.

- 1 lb ground turkey
- 1 cup thawed frozen spinach
- 1/2 cup panko crumbs
- 1/2 cup ricotta cheese
- 1/2 cup shredded mozzarella cheese
- 1 egg
- 3/4 teaspoon lemon zest
- 3/4 teaspoon red pepper flakes
- 3/4 teaspoon kosher salt
Place the spinach in 2 paper towels and squeeze out the water.
Line a rimmed baking sheet with foil and set it aside.
Preheat broiler.
Place all ingredients in a large mixing bowl.
Use your hands to mix the ingredients together.
Form the meat mixture into 2-inch balls using your hands or a cookie scoop.
Place the meatballs on the rimmed cookie sheet as you create the meatballs.
Broil in the oven for 8-10 minutes or until the meatballs are cooked.
You can turn the meatballs halfway through the cooking time to brown on all sides.
Watch the meatballs carefully after 5 minutes so they don't burn.
