To make hazelnut coffee take some roasted coffee beans, add chopped hazelnuts to the beans let them set for 3 or 4 days, then grind them up together add your spices, such as cinnamon nutmeg or allspice but only add half of what you would normally add if you want to add spices at all. Just putting the hazelnut in with the roasted beans and then brewing it should give you a nice hazelnut flavor. Use a 2:1 on coffee to hazelnuts two parts coffee one part hazelnut for your measurements.
This is what my buddy’s wife does and it taste wonderful, hope this works for you.

You could try using nutmeg. I think that hazelnut flavoring is added to the coffee beans before they are roasted so it’d be hard to duplicate in this type of a mix.
