- 2 stalks celery diced
- 1 small onion diced
- 4 cups chicken broth
- 1 13.5 ounces can coconut milk
- 1 packet ranch seasoning mix
- ½ cup homemade buffalo sauce
- 2 pounds boneless boneless skinless chicken thighs or chicken breasts, cut into bite-size pieces
- 1 Tablespoon corn starch
- 2 Tablespoons water
Place all ingredients EXCEPT corn starch and water into your slow cooker. Stir to combine.
Cover the slow cooker and cook on high for 3 hours.
Whisk together the corn starch and water in a small bowl. Add to the slow cooker and cook an additional 15 minutes or until thickened.
