Ingredients
  

  • 2 stalks celery diced
  • 1 small onion diced
  • 4 cups chicken broth
  • 1 13.5 ounces can coconut milk
  • 1 packet ranch seasoning mix
  • ½ cup homemade buffalo sauce
  • 2 pounds boneless boneless skinless chicken thighs or chicken breasts, cut into bite-size pieces
  • 1 Tablespoon corn starch
  • 2 Tablespoons water

Instructions
 

  • Place all ingredients EXCEPT corn starch and water into your slow cooker. Stir to combine.
  • Cover the slow cooker and cook on high for 3 hours.
  • Whisk together the corn starch and water in a small bowl. Add to the slow cooker and cook an additional 15 minutes or until thickened.
